Why not make your own car cake?

Ingredients:

For the sponge

13oz (400g) self-raising flour
1 1/4 tsp baking soda
8.8oz (250g) caster sugar
3 3/4oz (115ml) sunflower oil
14fl oz (400ml) Milk (Mr bean used oat milk)
3 tbsp golden syrup
2 tsp vanilla extract

For the filling

7oz (200g) dairy-free spread, plus extra for greasing
6oz (175g) icing sugar, sifted
2.5oz (70g) Strawberry Jam
1 tsp vanilla extract

Method:

Preheat the oven to 160c (320f)

Sift the flour, baking soda and caster sugar into a bowl and mix

Pour sunflower oil, milk, golden syrup and vanilla extract into a jug and mix

Then pour the mixture into the dry ingredients and mix well until smooth (Mr Bean used a hand blender)

Grease and flour the cake tin then pour the mixture into the cake tin and place in the oven for 35-45 minutes.

Once the cake mixture is cooked, remove from oven and place on the side for 15 minutes to cool.

Whilst the cake is cooling, mix dairy free spread, sifted icing sugar and vanilla extract into a bowl, cover then place in fridge.

Once the cake has cooled completely slice into halves and spread on your jam and fillings.

roll out your colored icings using greaseproof paper to avoid sticking. Cover your cake and start decorating!
